Zucchini Fritters
Crispy, flavorful, and full of zucchini, these zucchini fritters take only a few minutes to whip up and are super fresh and delicious.

    1. Use a box grater to grate zucchini. With a tea towel, squeeze out excess moisture until most of the liquid is removed (might have to do a little at a time to remove the most liquid).
    2. In a medium-sized bowl, combine all ingredients and mix thoroughly together. With a medium-sized cookie scoop (or teaspoon), scoop out mixture in balls and set on paper towel-lined plate.
    3. Heat 2 tablespoons olive oil in skillet over medium-high heat. When oil is hot, add in fritters to pan, making sure to not overcrowd pan. As they cook, press the balls down to make a small cake shape. Flip over after about a minute until fritters are brown and crispy.
    Dipping sauce
    1. In small bowl, mix together ingredients for sauce. Keep in refrigerator until ready to use.
