  1. Preheat oven to 375 degrees F. Spray an 8×8″ pan with non-stick cooking spray. Set aside.
  2. In a bowl attached to a stand mixer (or with a hand mixer), cream together coconut oil and sugar. Add in eggs, one at a time, and beat thoroughly.
  3. In a separate bowl, sift together dry ingredients: flour, salt, and baking powder. Starting and ending with the dry ingredients and with mixer on low speed, alternately add in dry ingredients and the milk and vanilla. Mix until just combined, being sure to not overmix.
  4. Pour batter into prepared pan and bake for 20-25 minutes or until edges are slightly browned and toothpick inserted in middle comes out clean.
  5. Serve with fresh strawberries and whipped cream.
