Instructions
  1. Stir shallot, coriander, ginger, and oil in a medium sauce pan.
  2. Heat until fragrant.
  3. Coarsely chop dried fruit.
  4. Add apricots, vinegar, figs, prunes, raisins, molasses, and water.
  5. Season with salt & pepper.
  6. Bring to simmer, add more water if too thick.
  7. Finished when liquid is almost evaporated.
