S’mores Bars

Even better than the campfire staple, these S’mores Bars are super easy to make and irresistible. When made with semi-sweet chocolate chips, they’re sweet but not too sweet and filled with the chewy taste of marshmallow and crunchiness of graham cracker (cereal).

Have you ever made something that you’re just not sure will turn out right? You’re apprehensive about the ingredients, not sure you want to put in the time? That’s how I felt before/during/after I made these bars. But, man, was I wrong! These bars might just be one of the best things I’ve ever made. I’m not even joking.  This is another recipe I found in The Central Market Cookbook I picked up at a yard sale earlier this spring.

Mitch made the comment the other day (I’m pretty sure out of the blue) that he thinks s’mores are the most overrated things ever. He went on to say they look good enough and he always gets sucked in but afterward is filled with regret. I know…pretty dramatic for a man, right? (I think I added the “with regret” part but he did say he always feels gross after eating a s’more.) And I must agree with him. They’ve never been a fave for me either. Sure, I’ll partake but I’m with Mitch on this one…they’re just “okay.”

So, honestly, I wasn’t really thinking these bars were going to be all that great. So confident, right? 😉

But I am here to tell you people–THESE BARS ARE AMAZING. Like, you-better-not-eat-the-whole-pan amazing. Sure, they might not look like much (I tried!) but I’m just gonna say this once: this is a bar you definitely need to make.

I shot these while they were still a little warm, so they were extra gooey/crumbly. I did stick them in the fridge for a bit afterward to firm them up. But they stay pliable/chewy thanks to Golden Barrel Light Corn Syrup. I know. I hear all you health-food nuts and I agree–corn syrup isn’t God’s gift of health to us, but when used at the right place and time, it is amazing and what is exactly needed in some recipes. I’ve heard people making these bars with sugar and they just aren’t the same. So, suck it up and use the light corn syrup–it’s totally worth it!

Instructions
  1. Measure cereal out into a large bowl and set aside till later. Grease a 9x13" pan with 1 Tbsp softened butter.
  2. Heat corn syrup, remaining 2 Tbsp butter, and chocolate chips in a saucepan over medium-high heat until just boiling, stirring constantly. Remove from heat and stir in vanilla extract.
  3. Pour chocolate mixture over cereal, stirring until cereal is evenly coated. Fold in marshmallows.
  4. Press mixture evenly into pan. Let stand until firm or place in refrigerator until firm. Cut into squares. Store in an airtight container in a cool place.
