Peanut Butter Chex Mix
Peanut butter and chocolate with some crunch: this Peanut Butter Chex Mix is seriously addicting!
The first time I ever had Muddy Buddy Chex Mix was when I was in high school. I was over at a friend’s house and she shared some (what they called Puppy Chow) with me. It was quite possibly the tastiest thing I’d ever eaten up to that point in my life (probably not, but I reeeallly liked it). Fast forward twenty-some years ahead and I’m still a fan of the sweet, crunchy confection. This time though, peanut butter is added to the snack to make it even better. I made this with Peanut Butter Chex Cereal–did you know that’s a thing now?? If you can’t find the peanut butter variety, you can still use regular corn or rice Chex cereal.
This recipe is so simple–it’s a no-bake one so it only takes a few minutes to whip together. Simply melt chocolate chips, peanut butter, and Golden Barrel Coconut Oil together in the microwave for 30 seconds or until melted. Stir and step one is done.
Then pour that melted chocolate over half of the peanut butter Chex cereal, stirring to coat evenly.
Then a bit of confectioners’ sugar and cocoa powder coating and you’re almost done.
I added some Reese’s miniature cups cut into fourths. You can additional peanuts, Reese’s pieces, chocolate chips…really anything you want at this point. Even broken-up chocolate-covered pretzels would be a nice touch. The key is to make it your own.
This makes a nice big bowl of mix–perfect for sharing.
So do you need a quick snack for game/movie night? Or maybe even a last-minute Valentine treat? Look no further. If you’re a peanut butter and chocolate fan, this treat is for you.
