Happy New Year! Hope yours is off to a great start. At our house, we have one who’s had a cold for quite some time and I thought it was nearing the end, but then yesterday he came home from school worse than ever. Ugh! These winter days can be hard fighting off germs and bugs. My guy who is sick is by far my worst eater, so I’ve been trying to share how important good nutrition is to good health. It’s hard some days!

One thing that he does love is this granola. He had several bowls of it yesterday–the last bowl was because he only ate a little bit of the Indian food I cooked for dinner. I can’t blame him though–that coconut chicken curry was spicy (and something I would have NEVER eaten as a kid!). So granola it was for Finn. Actually all of my guys wanted some granola later in the evening and they all loved it.

This makes a huge batch of granola, so if you’re cooking for only a couple people, just half the recipe. This will keep well in an airtight container (can also be frozen) so you can enjoy homemade granola for a long while.

There are great sources of fiber here–between the oats, wheat germ, bran, and raisins–it’s a great way to start your day off right. Add in some healthful fats (coconut oil and peanut butter) and you have an all-around balanced meal.

Instructions
  1. Preheat oven to 250 degrees F. Line two large baking sheets with parchment paper.
  2. In a large bowl, mix together first seven ingredients. Set aside.
  3. In a medium saucepan over medium heat, stir together peanut butter, honey, maple syrup, and coconut oil until melted.
  4. Pour peanut butter mixture over top dry oatmeal mixture. Stir with a large spatula until everything is evenly coated.
  5. Spread out granola on prepared pans. Bake for 30-45 minutes (or until golden brown), stirring after every 15 minutes. Remove from oven and stir in raisins. Let cool on pan. Store in airtight containers.

      Hi Odie, Looks like we missed the almonds. It should be 1 cup. It is now added to the recipe ingredients. Sorry about that.
