Oatmeal Peanut Butter Chocolate Chip Breakfast Bars
Refined sugar-free, these oatmeal chocolate chip bars are a great way to start your day!
    1. Preheat oven to 350 degrees F. Line an 8×8″ pan with parchment paper. Set aside.
    2. In a medium-sized bowl, mix together oatmeal, flour, cinnamon, baking powder & soda, and salt.
    3. In another medium-sized bowl, mix together coconut oil, eggs, maple syrup, peanut butter, and vanilla until combined and smooth.
    4. Pour in the dry ingredients with the wet ingredients, stirring to combine. Stir in chocolate chips. Pour batter into prepared pan and spread with spatula. Bake for 20-25 minutes or until toothpick inserted in middle comes out clean. Store in airtight container.
