Oatmeal Peanut Butter Chocolate Chip Breakfast Bars

These summer mornings can be challenging. I am still working my normal hours at our local YMCA, so that means the boys are up and ready to tag along with me three mornings a week. Because it’s summer (i.e. late nights), mornings tend to have a slower start. And that’s typically fine except when we need to be out the door by 9:00. Enter these bars. They’re perfect for that on-the-go lifestyle that requires a quick breakfast. These bars are substantial–they have both peanut butter and oatmeal in them–and they’re sure to satisfy and hold you off for a few hours.

There’s only a little bit of sweetener in them and that’s maple syrup, so they’re not overly sweet. The chocolate chips do add to the sweetness, if you’re using chocolate that has some sugar in it. (I used 65% cacao chips for a more-chocolate flavor.) And with only a couple tablespoons of coconut oil, there’s not a ton of fat in them either. Of course adding peanut butter to them bumps up the fat, also making them more filling.

I love that these are an easy recipe to throw together. No mixer is required and that just makes cleanup a breeze!

      Ingredients

      Instructions
      1. Preheat oven to 350 degrees F. Line an 8x8" pan with parchment paper. Set aside.
      2. In a medium-sized bowl, mix together oatmeal, flour, cinnamon, baking powder & soda, and salt.
      3. In another medium-sized bowl, mix together coconut oil, eggs, maple syrup, peanut butter, and vanilla until combined and smooth.
      4. Pour in the dry ingredients with the wet ingredients, stirring to combine. Stir in chocolate chips. Pour batter into prepared pan and spread with spatula. Bake for 20-25 minutes or until toothpick inserted in middle comes out clean. Store in airtight container.
