I’m always on the lookout for simple but healthful breakfast recipes that will make our mornings a bit easier at home. With three boys and one momma that needs to get ready quickly, an easy breakfast is always a good thing. These muffins fit the bill. They’re perfect to grab and run out the door. Plus, I love that they’re substantial and healthful as well.

These muffins are jam packed full of flavor, thanks to that Golden Barrel Supreme Baking Molasses as well as those familiar spices often paired with molasses–cinnamon, ginger, and cloves. Just spread some softened butter on top, and you have a delicious and hearty meal on the go.

And because these are hearty muffins, they’re sure to keep you satisfied well into your morning. I wasn’t sure if my guys would like these muffins, but they all loved them! We even shared them with the neighbor kids and they were a hit. So if you have kids in your house, these are kid-tested and approved!

Instructions
  1. Preheat oven to 350 degrees F. Grease muffin pan or use cupcake liners.
  2. Beat together the yogurt, egg, molasses, raisins, wheat germ, oats, and butter in a large bowl until evenly mixed. In a separate bowl, sift together the flour, baking soda, cinnamon, ginger, cloves, and salt. Fold the flour mixture into the molasses until a batter has formed. Pour batter into muffin cups, filling to the top.
  3. Bake in preheated oven until a toothpick inserted into the middle of a muffin comes out clean, about 25 minutes.
