Maple Oatmeal Muffins

Instructions
  1. Preheat oven to 400 degrees F. Line muffin pan with liners or spray pan with non-stick spray. Set aside.
  2. In a large bowl mix, together oatmeal and milk. Add in maple syrup, coconut oil, brown sugar, and eggs, mixing well to combine. Add in dry ingredients: flour, baking powder, cinnamon, baking soda, and salt and stir until just incorporated (be sure to not overmix).
  3. Using a large cookie scoop, scoop batter into prepared pan(s) and sprinkle reserved raw sugar on top. Bake for 15-18 minutes and check for doneness by inserting toothpick in middle. Clean toothpick means they’re done. Let cool in pan on rack for 5 minutes before removing from pan and cooling fully on rack. Store in airtight container.
