Maybe you started this new year with intentions of working out more, or eating less junk: that’s awesome! This is a recipe that you can turn to then when you’re feeling a sweet tooth craving coming on.

I’ve mentioned before but my boys are big chocolate/peanut butter fans. Throw some banana in the mix and they’re all over it. Actually the other day my oldest, Ryder, asked me to make a dessert that had all three of those flavors in it. Success.

This is one of those breads where you can taste each one of the flavors. The chocolate is rich and pronounced but so is the banana. There are three whole bananas in here, after all. The banana not only adds to the flavor, but it makes this bread super moist. And as far as the peanut butter goes, there’s some in the bread as well as swirled on top. (Although, my youngest slathered additional pb on his slice!) The three flavors work beautifully together. And to up the chocolate flavor (and texture) a little bit more, I added chocolate chips to the batter and on top. You can use whatever chocolate you have–even the sugar free kind if you’re watching your sugar. Yum.

Mitch got me a Vitamix for my birthday this year so I used that to mix all the ingredients together–it couldn’t have been easier. So if you have a blender or food processor, you can do the same, otherwise just mix in a bowl by hand.

Ingredients

Instructions
  1. Preheat oven to 350 degrees F. Line a loaf pan with parchment paper. Set aside.
  2. Add all ingredients except chocolate chips to a high-speed blender or food processor and mix until smooth. (There's no flour in this so you don't have to worry about over-mixing.) Stir in chocolate chips.
  3. Pour batter into prepared pan. Pour melted peanut butter on top of batter and with a clean knife, swirl the peanut butter into the batter. Sprinkle some chocolate chips on top.
  4. Bake loaf for about 60 minutes or until toothpick inserted in middle comes out clean. Let cool on rack for 10 minutes before removing from pan. Store in airtight container.
