Flourless Peanut Butter Cookies
This is the quintessential peanut butter cookie but without the gluten! Full of mouthwatering flavor and even better drizzled with chocolate, these peanut butter cookies are everything you want in a peanut butter cookie.

  1. Mix all ingredients together in large bowl. With a medium cookie scoop, measure out dough and place on a large plate, covering with plastic wrap and refrigerate for at least an hour (and up to 5 days).
  2. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicon baking mat. Place cookie dough pieces on sheet with 2″ in between each dough ball. Press dough down slightly with fork in a criss-cross pattern. Bake for 8 minutes or until edges are set and tops are barely set. Do not overbake–they’ll firm up as they cool.
  3. Set on cooling rack till cool. Drizzle with chocolate.
Drizzle
  1. Heat chocolate chips and coconut oil in double boiler, stirring occasionally, until completely melted. Drizzle half of each cookie with chocolate. (I refrigerated my cookies for a bit after to help harden the chocolate.)
