Flourless Peanut Butter Cookies

This is the quintessential peanut butter cookie but without the gluten! Full of mouthwatering flavor and even better drizzled with chocolate, these peanut butter cookies are everything you want in a peanut butter cookie.

I noticed the other day that we didn’t have a straight-up peanut butter cookie recipe on the blog and that needed to change pronto. My crew loves all things peanut butter. Especially my husband. So I wanted to create a cookie that was simple yet so delicious. Here ya go.

I love recipes that aren’t fussy. This recipe doesn’t even require a mixer, which is awesome: one less thing to wash, am I right? Simply pour all the ingredients in a big bowl and stir to combine. That’s it! There’s both brown sugar as well as organic cane sugar (or white sugar) in here. The brown sugar just adds a little bit of depth to the flavor to the cookies. The peanut butter and egg hold the cookie together, but this is a crumbly cookie. When Finn (my youngest) ate his, it was falling apart. That’s just part of the experience with these; so know that ahead of time–crumbly is normal. Keep a plate handy!

One thing you want to keep in mind is that the cookie dough needs to chill for an hour (or longer) before baking. Otherwise they’ll spread all over the pan. I made my dough in the morning then after lunch, popped them in the oven just in time for the boys’ after-school snack.

I decided to doctor up the cookies after they were cooling for a bit. I simply melted some semi-sweet chocolate chips and Golden Barrel coconut oil in a double boiler (my preferred method of melting chocolate) then drizzled the chocolate on one half side of the cookies. I love how they turned out! I’m all about rustic-looking desserts and these fall into that category. Not to mention–for all you chocoholics, the added layer speaks your language, doesn’t it?

Perfectly chewy inside. Just be sure to not overbake these cookies. They’re better underbaked than overdone.

  1. Mix all ingredients together in large bowl. With a medium cookie scoop, measure out dough and place on a large plate, covering with plastic wrap and refrigerate for at least an hour (and up to 5 days).
  2. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a silicon baking mat. Place cookie dough pieces on sheet with 2" in between each dough ball. Press dough down slightly with fork in a criss-cross pattern. Bake for 8 minutes or until edges are set and tops are barely set. Do not overbake--they'll firm up as they cool.
  3. Set on cooling rack till cool. Drizzle with chocolate.

  1. Heat chocolate chips and coconut oil in double boiler, stirring occasionally, until completely melted. Drizzle half of each cookie with chocolate. (I refrigerated my cookies for a bit after to help harden the chocolate.)
