Preheat oven to 375 degrees F. Grease a 8″ square pan with oil. Set aside.
In a medium-sized bowl, stir together egg, sugar, milk, and coconut oil and mix until combined. Add in flour, salt, and baking powder and mix until incorporated. Spread evenly in prepared pan and sprinkle chopped cranberries on top.
In a separate small bowl, mix together crumb ingredients: flour, sugar, and butter until crumbs are pea-sized. Sprinkle evenly over cranberry layer. Bake for 25 minutes or until slightly browned around edges and baked through in the middle. Cool on rack.
