These Coconut Oil Rice Crispy Treats are easy, quick, and so delicious! A dairy free version of the classic treat that you are guaranteed to love!

Coconut Oil Rice Crispy Treats - Golden Barrel Recipe

Rice Crispy (or Krispy) Treats were a favorite of mine growing up. I’m thinking my mom made them a lot because they are so easy. No baking, only a few minutes involved, and so good! I still love them and I wanted to try making them with Golden Barrel Coconut Oil in place of the butter- it was a great idea! You will not miss the butter- promise!!

Coconut Oil Rice Crispy Treats

All you need is 3 simple ingredients to make these. It can’t get much easier than that! One tip I have is to make sure the pan you use is big enough. It has to hold not only all those melted marshmallows, but also all the rice crispies. I have had a mess more than once trying to make these work in a too small pan.

These are gooey, sweet, and the perfect combination of crispies and marshmallows. I know that might not seem like a big deal, but I have definitely had overly dry and overly marshmallowy treats. Made this way will result in ooey, gooey, soft, pillowy, sweet squares. They are perfect!

Coconut Oil Rice Crispy Treats

Because coconut oil replaces the butter, these are dairy free. They can also easily be made gluten free if you use gluten free rice crispy cereal. I made them with both regular and gluten free cereal and both turned out great.

Here is a quick step-by-step in case you’ve never made them before:

Here are the ingredients you’ll need- rice crispy cereal, Golden Barrel Coconut Oil, and one bag of marshmallows.

Coconut Oil Rice Crispy Treats

Put the coconut oil and marshmallows in a large pan and heat over medium heat. At first it will look too oily, but just keep stirring, it’s the perfect amount.

Marshmellows

Stir constantly until the mixture is completely smooth then turn off the heat.

Marshmallow Fluff

Add the rice crispies in and fold them in until completely coated.

Rice Crispys

Dump into the prepared pan and gently press down with a spatula or your hands. Don’t press too hard or the treats will not be soft. Let cool for about an hour.

  1. MetalMamma says:

You realize Rice Krispies are already gluten free because it’s RICE.

    1. Well, if rice was the only ingredient then yes, they would be gluten free. But there is also malt in them making them not gluten free.

  2. Mandy says:

NO, Rice Krispies are NOT gluten free!!!!! They contain malt and malt is NOT gluten free. They used to make gluten free rice KRISPIES but they are hard to find. I don’t mean to sound harsh but having Celiac Disease it scares me that a newly diagnosed might think they are.

    1. You are right Mandy. I’m sorry if I gave the impression that Rice Krispie’s are gluten free. Mom’s Best is the brand that makes a gluten free version that I use if they need to be gluten free. Thanks for the comment.

      1. Laura says:

We make similar that are gluten free we just use fruity pebbles cereal instead! They are delicious!

    2. Julie says:

I am also gluten free (among others… 23 food intolerances)…. to make this, I use the gluten free sprouted rice crispy cereal sold at sprouts. they don’t have to be rice KRISPY brand. 😉

      1. Thanks for that tip, Julie! That is helpful to know another gluten free option! 🙂

  3. Katie says:

Will they taste like coconut though? My coconut oil makes everything I bake taste like it.

    1. Hi Katie! No, they don’t taste like coconut. Because this Golden Barrel Coconut Oil is refined- it takes away the strong coconut flavor. I hope you try them. 🙂

      1. Diane says:

I’m in Canada & we don’t have that brand of cocoanut oil. Any suggestions?

  4. Jennifer says:

Is there marshmallows that are not full of corn ingredients that you know of??? Great recipe thank yoh

    1. Hi Jennifer- there are some from the health food store with better ingredients, but corn is still listed on the ingredient list. There are these-https://thrivemarket.com/elyon-gluten-free-natural-vanilla-marshmallows which look like a better option. I’m sorry it’s not exactly what you’re looking for. I hope that helps though.

      1. Tryce Hyman says:

I know this is crypto-posting, but if you can find the elyon bags (or any kosher brand) that are specifically kosher for Passover, they won’t have corn in them. The production lines run them grain-free one time a year for the holiday…when they hit the shelves I stock up.

        1. Thanks for sharing, Tryce! That is great to know!

      2. Susan L Henry says:

Dandies brand are vegan and contain no corn syrup

  5. Annie says:

Do you know how long these last for? I am wanting to make some ahead of time for my sons party ☺

    1. Hi Annie- they last 4-5 days stored in an air tight container. I hope your son enjoys them! 🙂

  6. Lauren Vest says:

I thought marshmallows had milk in them. I recently developed a milk sensitivity and as it gets worse I have to be more and more careful with what I eat. I was told the ‘natural flavor’ listed in the ingredients list of marshmallows is actually milk. Do you have any information about this?

    Thanks!

    1. Hi Lauren- I’ve never heard that. I know they contain gelatin which makes them not vegan, but there are certain brands that are specifically dairy free if you’re that sensitive. Here is a link to some that are dairy free-https://thrivemarket.com/dandies-original-vanilla-marshmallows-vegan
I have never tried them so I can’t say if they melt the same, but it might be worth the try. I hope that helps. Sorry I don’t have more information on that. Let me know if you have any other questions.

      1. monika says:

Even marshmallow “fluff” is free from dairy.

    2. monika says:

      Marshmallows NEVER contain dairy.
A marshmallow is a sugar-based confection that, in its modern form, typically consists of sugar, water and gelatin, which is whipped to a spongy consistency, molded into small cylindrical pieces, and coated with corn starch. (Some marshmallow recipes call for eggs.)

      1. Thanks for that info, Monika!

      2. You don’t have collect info some do have dairy. Whey specifically. Please don’t speak like you know something when you don’t.

  7. Cindy says:

You can use puffed rice and that is gluten free, and if you use dandies brand marshmallows than they’d be vegan

    1. Thank you for those tips, Cindy!! That is very helpful 🙂

  8. Sherry says:

As with the malt, Rice Krispies also contain barley- which is also not gluten free. Be sure to check for ‘hidden gluten’ ingredients when purchasing items you would assume are gluten free!

    1. Thanks, Sherry! I didn’t see barley listed on the ingredients of my box, but you’re right- always check ingredients!

  9. Katie says:

How many boxes of Rice Krispies does this require?

  10. Carolyn says:

Would this make enough for a class of 19 kids? Thanks!

    1. Hi Carolyn- I would probably double the batch to make sure there is enough. You could make them in a 13×9 instead of 9×9, but that will make them much thinner than the picture. I hope that helps and I hope you enjoy them!

  11. Jennifer says:

Hi there, I can not seem to find the Golden Barrel coconut oil in time for when I want to make these. Is there another kind that you would recommend from a regular grocery store?

    1. Hi Jennifer- an unrefined version would work best if you don’t want a strong coconut flavor. I hope you enjoy them! 🙂

  12. Tara says:

I don’t know which states Aldi stores are in, but their brand of Rice Krispies (they call it “Crispy Rice”) does not contain malted barley, and the package states that they are gluten free… And less than $2 a box!! 🙂 🙂 🙂

    1. Thank you so much for that tip, Tara! I love Aldi- we have them here in Michigan 🙂

  13. Kathy Fain says:

I have Coconut Oil, but not the solidified kind (not sure how to say that, but not like Crisco). Would that work? I hope these DO taste like coconut!! : )

    1. Hi Kathy- yes, that should work fine. The coconut oil gets melted anyway so it doesn’t need to be solid. You can always add some shredded coconut to add coconut flavor 🙂 I hope you love them!!

  14. Kimberly says:

Tried this recipe today, and they came out great! I used unrefined coconut oil and it didn’t leave an overpowering coconut flavor, it’s pretty mild and compliments the marshmallow nicely. Thanks for the recipe!

    1. You’re welcome, Kimberly! Thanks for trying them- I’m glad you like them!

  15. Claudia says:

Do I need to put them in the fridge to let them cool down?

    1. Hi Claudia- that isn’t necessary. They will cool fully at room temperature pretty fast- in about 15 minutes. They might be a little messy to cut before that. I hope that answers your question.

  16. Amber Easum says:

Aldi’s store brand – Millville Crispy Rice – is gluten free! FYI ;D

    1. Thank you, Amber!

  17. Jessica l says:

Delicious! Just made these! Thank you for passing along. I used trader Joe’s organic virgin coconut oil unrefined! Worked great and so yummy!

    1. You’re welcome, Jessica! Thank you for trying them! I’m so glad you like them! 🙂

  18. Jess says:

I just made them with Puffed Rice from Arrowhead Mills, (it is just Puffed Whole Grain Brown Rice). it doesn’t say is is GF but my little is allergic to Gluten and dairy, but she is ok with the puffed Rice cereal. and i used the GF Trader Joes Marshmallows. so far… it does look good. I’ll try in 45 mins.

    1. Sounds great, Jess! I hope your son enjoys them!

  19. Chelsea says:

So I’m going dairy free for my baby that has a dairy sensitivity, Sotheby’s coconut oil is all new to me. I assumed when you said 1/4 c coconut oil that it using the solid form? Or is it 1/4 c in liquid form? Mine wasn’t the unrefined coconut oil, the LouAna 100% pure coconut oil brand, and it doesn’t taste like coconut at all.

    1. Hi Chelsea! You can measure it at room temperature- that may be liquid right now, or soft. I hope that helps and I hope you enjoy these! Let me know if you have any other questions!

  20. Chelsea says:

Oops I meant to write “so using the coconut oil is all new to me” ?

  21. Charlotte says:

I have a quick question, can they be prepared in the microwave instead of stove top? (I always make the regular version, with butter, in the microwave)

    1. Yes, that should work fine. Just follow how you normally make them. Hope you enjoy! 🙂

  23. Sherry says:

Even though only I am lactose intolerant, the rest of my family isn’t. I made these as a treat but my family helped gobble them up!! Def a win for those who are dairy free AND those who are not!!!!!
    Yuuummmm

    1. Yay! I’m so glad to hear the whole family loved them! Thanks for trying my recipe and for the great feedback 🙂

    1. Sounds delicious, Shina! Enjoy!

  25. Shoshana Mazal says:

When you say ‘PAN” do you mean a frying pan or a large pot?
    Shoshana Mazal
    P.S
If the package of marshmallows says PARVE, they are dairy free.

    1. Hi Shoshana- like a large pot. Sorry that wasn’t clear. I’m not sure about the marshmallows. I know in general marshmallows are dairy free- I’m not sure what PARVE means or stands for.

      1. Kosher…

  26. Esther says:

This looks delicious! About how many servings did you cut it in to?

    1. Thanks, Esther! I cut them into 9 squares. Hope you enjoy!

  27. KRose says:

Well – I am Queen in my house tonight, LOL!!!

  28. A. P. says:

Candies be made with sugar free, dairy free, homemade marshmallows ? The kind you make with water, honey, and gelatin?

    1. Hi A.P.- I think they would work great with homemade marshmallows! They may be a little stickier, but they should taste good. I hope that helps. Enjoy!

  29. A. P. says:

Can these be made with sugar free, dairy free, homemade marshmallows ? The kind you make with water, honey, and gelatin? *^

  30. Lindsay says:

Kellogs makes a gluten free brown rice rice crispy cereal found at local grocery stores. I love using the coconut oil instead of butter, much healthier and tastes better!!!!

    1. Thanks for that great tip, Lindsay!

  31. Chris Jacobs says:

Hey Jessica, I used your recipe but decided to add some Marijuana to them and they turned out great! I just added the herbs during the marshmallow step and they ended up being quite strong!

    1. Thanks for trying my recipe, Chris! I’m so glad you enjoyed them! 🙂

    2. Chris,
That is the best random comment I have ever come across on a recipe. Thank you!

    3. Oh my goodness, and i do mean goodness!! Fabulous!!! Thx for the tip I’m doing this for the weekend and try to scale quantity back ha! I’ll let you know!!

  32. Brittany says:

Quick question! I was messing with the servings and can’t really wrap my head around the idea that 5 cups of rice krispies and an entire bag of marshmallows yields only 4 servings. I’m planning to make these for my little guy’s birthday and want to make sure I’m preparing enough. Can you just confirm that the original recipe only makes 4 servings? Thank you in advance!!

    1. Hi Brittany- I hope this isn’t too late! It makes 9 bars if you put them in a 9 inch square pan and they are quite thick. You could press them into a 13×9 and cut them into 12 as well. Definitely more than 4 servings! Hope that helps and happy birthday to your son 🙂

      1. Brittany says:

Thank you! Just in the nick of time!

  33. Mr serious says:

Hi Jessica. Do you know if this is a good snack for WW and what are the points for each bar ?

    1. Hi Robin- I’m not familiar with Weight Watchers and I don’t know the points. You’ll have to go to their site to help figure that out. Sorry!

  36. Michelle W. says:

I made these today with 1/3 c coconut oil, 16 oz bag marshmallows, and 7 1/2 c cereal. It filled a 9×13 pan perfectly. They were delicious!

    1. Thanks for trying them, Michelle! I’m so glad you like them 🙂

  37. akasha says:

how many calories in one of them

    1. I don’t calculate nutritional info for my recipes, but you can use a site like My Fitness Pal to help to figure it out. Enjoy!

  38. Thanks for the recipe! I modified it to make a light version and it turned out great (2 tbsp extra virgin coconut oil, 4 cups mini marshmallows, 6 cups Rice Krispies cereal, dash if vanilla extract, pinch of salt). They turned out great, I’m going to start making them with coconut oil instead of butter from now on. 🙂

    1. Thanks for trying my recipe, Liz! I’m so glad you like them!

  39. Wafaa says:

    Hi
Thank you for sharing this recipe.if I want to make it with chocolate what should I do?
I tried once and it become so hard like a rock the next day.Could you help me please?

    1. Hi Wafaa- I used a chocolate rice krispie, I didn’t add any chocolate to them. I hope that helps and you try them!

  40. Wafaa says:

Thank you but do you think it became hard next day because I used a dairy free melted chocolate chips? I wanted to add more chocolate flavor.

    1. Oh yes, that will make them harden. You could always do a chocolate dip after you cut them. That would be good!

  41. Wafaa says:

Thank you so much for the reply.God bless you

    1. You’re welcome!

  42. Wafaa says:

One last question please. Can I use chocolate powder instead to inhance the flavor?

    1. Hi Wafaa- you could maybe use a couple tablespoons, but I wouldn’t do more than that or it could dry out. You could add a chocolate spread- like chocolate peanut butter. That would work. Hope that helps!

  43. Wafaa says:

Thank you so much for your time and help.

    1. You’re welcome!

  44. Krista says:

Trader Joes, Fred Meyer, Marlene’s and many other stores carry Vegan Marshmallows that are free from gelatin. Gelatin is made from animal hooves. For Vegetarians and Vegans there are many alternatives. Best cost for vegan marshmallows is at Trader Joes they are $3 a bag. Happy Cooking 🙂

    1. Thanks for sharing, Krista!

  45. For weeks I had been mulling over making rice crispy treats, thinking and brainstorming unique flavor ideas and combinations. I wanted them to stand out in the sea of thousands of rice crispy recipes on Pinterest; I needed them to be delicious but also quick and easy. I was on a search of the perfect treat and nothing could get in my way. But then I was reminded of a saying, that sometimes the simplest ideas are the best. And it hit me coconut oil. I have about four jars of the stuff in my pantry and one jar sitting on my dresser. I use the one on the dresser daily as my skin moisturizer (even going as far as using it on my face when my facial oil runs out!)  Basically, coconut oil is present all over our house, so why not just make these rice crispy treats using coconut oil instead of the usual butter?! And my Coconut Oil Rice Crispy Treats were born!

  46. I added cannabis infused coconut oil and I’ll bet mine are the best 😉

  47. nicole says:

i use this Super delightful recipe every year for my best friend’s birthday but she can’t have any dairy products and it works perfectly !! so instead of rice crispies are use fruity pebbles this recipe is a lifesaver and it’s always delicious thank you so much 🙂
