These Coconut Oil Rice Crispy Treats are easy, quick, and so delicious! A dairy free version of the classic treat that you are guaranteed to love!

Rice Crispy (or Krispy) Treats were a favorite of mine growing up. I’m thinking my mom made them a lot because they are so easy. No baking, only a few minutes involved, and so good! I still love them and I wanted to try making them with Golden Barrel Coconut Oil in place of the butter- it was a great idea! You will not miss the butter- promise!!

Coconut Oil Rice Crispy Treats

All you need is 3 simple ingredients to make these. It can’t get much easier than that! One tip I have is to make sure the pan you use is big enough. It has to hold not only all those melted marshmallows, but also all the rice crispies. I have had a mess more than once trying to make these work in a too small pan.

 

These are gooey, sweet, and the perfect combination of crispies and marshmallows. I know that might not seem like a big deal, but I have definitely had overly dry and overly marshmallowy treats. Made this way will result in ooey, gooey, soft, pillowy, sweet squares. They are perfect!

Coconut Oil Rice Crispy Treats

Because coconut oil replaces the butter, these are dairy free. They can also easily be made gluten free if you use gluten free rice crispy cereal. I made them with both regular and gluten free cereal and both turned out great.

 

Here is a quick step-by-step in case you’ve never made them before:

 

Here are the ingredients you’ll need- rice crispy cereal, Golden Barrel Coconut Oil, and one bag of marshmallows.

Coconut Oil Rice Crispy Treats

Put the coconut oil and marshmallows in a large pan and heat over medium heat. At first it will look too oily, but just keep stirring, it’s the perfect amount.

Marshmellows

Stir constantly until the mixture is completely smooth then turn off the heat.

Marshmallow Fluff

Add the rice crispies in and fold them in until completely coated.

Rice Crispys

 

Dump into the prepared pan and gently press down with a spatula or your hands. Don’t press too hard or the treats will not be soft. Let cool for about an hour.

Ingredients

Instructions
  1. Line a 9x9 square pan with foil and spray with non-stick spray. Set aside.
  2. In a large pan, combine coconut oil and marshmallows over medium heat until completely melted. This should take 4-5 minutes and make sure to stir constantly so the bottom doesn’t burn.
  3. Once mixture is smooth, add the rice krispies and mix until evenly coated.
  4. Pour into prepare pan and let cool for about an hour. Cut into squares and serve.

    You realize Rice Krispies are already gluten free because it’s RICE.

    1. Well, if rice was the only ingredient then yes, they would be gluten free. But there is also malt in them making them not gluten free.

    NO, Rice Krispies are NOT gluten free!!!!! They contain malt and malt is NOT gluten free. They used to make gluten free rice KRISPIES but they are hard to find. I don’t mean to sound harsh but having Celiac Disease it scares me that a newly diagnosed might think they are.

    1. You are right Mandy. I’m sorry if I gave the impression that Rice Krispie’s are gluten free. Mom’s Best is the brand that makes a gluten free version that I use if they need to be gluten free. Thanks for the comment.

      I am also gluten free (among others… 23 food intolerances)…. to make this, I use the gluten free sprouted rice crispy cereal sold at sprouts. they don’t have to be rice KRISPY brand. 😉

    1. Hi Katie! No, they don’t taste like coconut. Because this Golden Barrel Coconut Oil is refined- it takes away the strong coconut flavor. I hope you try them. 🙂

    1. Hi Jennifer- there are some from the health food store with better ingredients, but corn is still listed on the ingredient list. There are these-https://thrivemarket.com/elyon-gluten-free-natural-vanilla-marshmallows which look like a better option. I’m sorry it’s not exactly what you’re looking for. I hope that helps though.

        I know this is crypto-posting, but if you can find the elyon bags (or any kosher brand) that are specifically kosher for Passover, they won’t have corn in them. The production lines run them grain-free one time a year for the holiday…when they hit the shelves I stock up.

    1. Hi Lauren- I’ve never heard that. I know they contain gelatin which makes them not vegan, but there are certain brands that are specifically dairy free if you’re that sensitive. Here is a link to some that are dairy free-https://thrivemarket.com/dandies-original-vanilla-marshmallows-vegan

    As with the malt, Rice Krispies also contain barley- which is also not gluten free. Be sure to check for ‘hidden gluten’ ingredients when purchasing items you would assume are gluten free!

    1. Hi Carolyn- I would probably double the batch to make sure there is enough. You could make them in a 13×9 instead of 9×9, but that will make them much thinner than the picture. I hope that helps and I hope you enjoy them!

    I don’t know which states Aldi stores are in, but their brand of Rice Krispies (they call it “Crispy Rice”) does not contain malted barley, and the package states that they are gluten free… And less than $2 a box!! 🙂 🙂 🙂

    1. Hi Kathy- yes, that should work fine. The coconut oil gets melted anyway so it doesn’t need to be solid. You can always add some shredded coconut to add coconut flavor 🙂 I hope you love them!!

    1. Hi Claudia- that isn’t necessary. They will cool fully at room temperature pretty fast- in about 15 minutes. They might be a little messy to cut before that. I hope that answers your question.

    I just made them with Puffed Rice from Arrowhead Mills, (it is just Puffed Whole Grain Brown Rice). it doesn’t say is is GF but my little is allergic to Gluten and dairy, but she is ok with the puffed Rice cereal. and i used the GF Trader Joes Marshmallows. so far… it does look good. I’ll try in 45 mins.

    So I’m going dairy free for my baby that has a dairy sensitivity, Sotheby’s coconut oil is all new to me. I assumed when you said 1/4 c coconut oil that it using the solid form? Or is it 1/4 c in liquid form? Mine wasn’t the unrefined coconut oil, the LouAna 100% pure coconut oil brand, and it doesn’t taste like coconut at all.

    Quick question! I was messing with the servings and can’t really wrap my head around the idea that 5 cups of rice krispies and an entire bag of marshmallows yields only 4 servings. I’m planning to make these for my little guy’s birthday and want to make sure I’m preparing enough. Can you just confirm that the original recipe only makes 4 servings? Thank you in advance!!

    1. Hi Brittany- I hope this isn’t too late! It makes 9 bars if you put them in a 9 inch square pan and they are quite thick. You could press them into a 13×9 and cut them into 12 as well. Definitely more than 4 servings! Hope that helps and happy birthday to your son 🙂

I modified it to make a light version and it turned out great (2 tbsp extra virgin coconut oil, 4 cups mini marshmallows, 6 cups Rice Krispies cereal, dash if vanilla extract, pinch of salt).     Trader Joes, Fred Meyer, Marlene’s and many other stores carry Vegan Marshmallows that are free from gelatin. Gelatin is made from animal hooves. For Vegetarians and Vegans there are many alternatives. Best cost for vegan marshmallows is at Trader Joes they are $3 a bag. Happy Cooking 🙂

  45. For weeks I had been mulling over making rice crispy treats, thinking and brainstorming unique flavor ideas and combinations. I wanted them to stand out in the sea of thousands of rice crispy recipes on Pinterest; I needed them to be delicious but also quick and easy. I was on a search of the perfect treat and nothing could get in my way. But then I was reminded of a saying, that sometimes the simplest ideas are the best. And it hit me coconut oil. I have about four jars of the stuff in my pantry and one jar sitting on my dresser. I use the one on the dresser daily as my skin moisturizer (even going as far as using it on my face when my facial oil runs out!)  Basically, coconut oil is present all over our house, so why not just make these rice crispy treats using coconut oil instead of the usual butter?! And my Coconut Oil Rice Crispy Treats were born!
