Soft and chewy cookies full of peanut butter flavor and the heartiness of oatmeal–what’s not to love? And these particular ones are gluten-free (mine made with GF flour…you can do the same or use all-purpose.)

This past weekend was a busy one for us. Our Saturday was full of basketball games in the morning, lunch with friends, then ice skating/dinner with other friends. I knew I wouldn’t have time to bake anything to bring for lunchtime dessert, so on our way to our friends’ house, we stopped at a local farm market. As I was perusing the desserts, (so many choices!) I saw some peanut butter cookies that looked amazing. I ended up choosing something else but the thought of peanut butter cookies was on my mind for several days. So I knew what I needed to do.

When our neighbor girl, Lyla, came over the other evening, we decided to do one of our favorite things–bake together. Those peanut butter cookies were fresh on my mind but I wanted something a little different. The addition of oatmeal in these cookies makes them extra special. Plus Lyla was on board with the idea–so off to baking we went!

As already mentioned, I used gluten-free flour (this Paleo flour) and the cookies turned out perfectly. You just never know when you’re using different types of flour, but these are a hit. Feel free to use regular good ol’ all-purpose if that’s what you have. 🙂

I used both butter and Golden Barrel Coconut Oil for the fat in these cookies. I think the combination is a winner–you get the taste of butter and the chewy texture from the oil. It’s the best of both worlds.

      Ingredients
      Servings: dozen
      Instructions
      1. Preheat oven to 350 degrees F.
      2. In a bowl attached to a stand mixer (or with a hand mixer), cream together butter, oil, sugars, and peanut butter until light and fluffy. Mix in eggs and vanilla.
      3. With mixer on low, gradually add in dry ingredients: flour, baking soda, salt. Mix in oatmeal.
      4. With medium-sized cookie scoop, scoop out dough on cookie sheet about 2" apart. Bake for 10 minutes or until tops are set. Let cool on sheets for 10 minutes then transfer onto wire rack to cool completely. Store in airtight container.

      4. These were really tasty! I made them with honey roasted peanut butter! Hubby added chocolate chips to the last half of dough. Delish!
