Butterscotch Raisin Cinnamon Bread Pudding

  1. Preheat oven to 375 degrees F. Butter a 9×13″ baking dish. Pour the cubed bread into pan. Set aside.
  2. To make the butterscotch sauce, combine the brown sugar, butter, and vanilla in a small saucepan over medium heat. Simmer the mixture, stirring until the sugar is dissolved and the mixture is smooth in consistency. Pour 1/2 cup out to cool.
  3. In a large bowl, whisk together the eggs, half and half, sugar, and the cooled reserved 1/2 c. butterscotch sauce. Fold in raisins and cinnamon and pour over bread cubes, stirring to evenly coat. Cover baking with foil and bake for 35 minutes, then uncover and bake an additional 10-15 minutes or until pudding is set.
  4. Serve with remaining (warmed up) butterscotch sauce and powdered sugar.
