Preheat oven to 350°. Line 2 baking sheets with parchment paper or use baking stones.
In large mixing bowl, stir together banana, peanut butter, blackstrap molasses and vanilla until well blended. Mix in rolled oats, baking soda and salt, until combined.
Using a cookie scoop, scoop out dough onto baking sheet. Bake 8-10 minutes.
Remove from oven and let set on baking sheet for 10 minutes before transferring to cooling rack to cool completely.
