Banana Oatmeal Molasses Cookies
Quite possibly the simplest cookies to make with only 7 ingredients and a few minutes to whip together, these banana oatmeal molasses cookies are my new go-to healthy treat.
As recipe developer here at Golden Barrel Baking Products, I have a pretty sweet job. Literally. But one of the “problems” I have is that I have a pretty sweet job. In other words, this mom of 3 tries her hardest to work out and stay in decent shape but I also have to sample all these recipes I make. (I know…someone has to do it. 😉 ) So when I come across a recipe that looks good and has simple ingredients, with no added sugar in it, that’s a win/win in my book. Honestly when I saw this recipe, I didn’t have high hopes. I mean, how good can a simple 7 ingredient healthy cookie be? But you guys…these cookies blew me away.
They’re loaded with good-for-you stuff like bananas, oats, and molasses and both satisfy your sweet tooth cravings and fill you up. This “cookie” can totally work as both a snack as well as a quick breakfast on-the-go. The peanut butter in them provides some protein and fills you up. With the addition of Golden Barrel Blackstrap Molasses, these cookies are full of essential minerals and vitamins. (Read more about the benefits of blackstrap molasses here.) I was surprised when I tasted these…you don’t really even taste the molasses in them. My husband said the same thing. Typically molasses (blackstrap especially) has a strong flavor, but like I said, the molasses didn’t stand out. They just tasted sweet like a cookie. The banana is the sweetener here. That’s another major plus with this recipe–no added sugar!
These cookies come together quickly and don’t even require a mixer. Simply mixing these by hand will give you the results you need. I’m sure you can add some additional mix-ins to these as well. Raisins, cranberries, seeds…all these would work here. So add your favorites or simply make them as-written. Once mixed, simply scoop batter out with a cookie scoop and bake for a few minutes. Done.
If you can’t have gluten, no problem. These cookies are gluten-free if you use GF oats. So with no added sugar, oil, or gluten, these are cookies you can feel good about.
