These fries are amazing. They’re perfectly seasoned, delightfully crispy, oh and they’re healthier than most fries because they’re baked. Seriously, guys, you need these fries in your life.

Baked Parmesan Herb-Seasoned Fries

Summer days are upon us. That means my boys are home pretty much all day every day. Sure, I go to work at the Y (I’m a group fitness instructor) and they come along with me–so that breaks up our day most days. But on Mondays and Wednesdays, we’re able to sleep in and hang out at home. It often takes a while to get into a new routine and these summer days have been no exception. But I must say that my boys are doing well adjusting. On our days at home, we have chores we knock out together. Then they’re able to play with neighbor friends and spend time on electronics. I think the biggest thing for me is feeding them. My guys (especially my middle one, Bryce) are always hungry. I’m talking–we get done dinner and literally five minutes later, Bryce is in the fridge looking for something to eat. It’s exhausting. Thankfully he’s always looking for a piece of fruit to grab and run out the door with, but still, that boy is always hungry.

I made these fries with snacking in mind. It never fails that right around 4:00, little bodies start meandering around the kitchen looking for “something to hold them over” till dinner. It drives me crazy. I made these fries the other day and shared them with the boys around 3:30. It was the perfect snack for them. First of all, they LOVED them, and the hot fries also filled their never-full tummies. I didn’t see those boys till dinner time. 🙂 Win Win.

The recipe is simple: slice up your favorite potatoes (mine are red-skinned), toss them in an olive oil parmesan coating, and bake. They do take a little while to bake up nice and crispy, but man oh man, are they worth the wait!

Adding fresh oregano on top gives these fries a fresh seasonal taste that’s out of this world. So whether you make these as a snack or a yummy side-dish paired with your favorite chicken or beef dinner, these fries are sure to be a hit in your house.

Instructions
  1. Preheat oven to 375 degrees F. Cut potatoes into smaller wedge-shaped pieces (I did half, quarters, then eighths). Place cut potatoes on baking sheet(s). Make sure they're not crowded; use 2 sheets if need be.
  2. In a small bowl, combine olive oil, Parmesan cheese, salt, garlic powder, paprika, pepper, and cayenne pepper. Mix until combined. Pour about 1/3 of oil mixture over top potatoes and using hands, rub oil until potatoes are evenly coated.
  3. Bake in oven for 45-60 minutes, turning potatoes and reapplying oil mixture every 15 minutes until fries are golden brown and crispy. After the first 15 minutes, mince oregano leaves and sprinkle on top of fries. Remove from oven and let cool slightly. Serve hot.
