It’s hard to believe that September has arrived, isn’t it? Having to stay at home with my boys since March, it seemed like we were in a perpetual summer. (Am I right, mommas?!) But alas, summer is indeed on its way out and my boys are back in school…for now, anyway. Being back into a daily routine has been great for everyone. And part of that daily routine includes after-school snacks. I like to make my boys a healthful treat that they’ll both enjoy and that will sustain them till dinner time. Enter this baked oatmeal. My guys have always been big fans of baked oatmeal and this fall variety is no exception.

It really is perfect any time of day. We’ve enjoyed baked oatmeal for breakfast on weekends, as an after-school snack, and even as a dessert with ice cream on top. It’s both a sweet treat as well as super satisfying. And it couldn’t be easier to whip up.

This oatmeal has both Golden Barrel Coconut Oil and butter in it. You want the butter to be around room temperature and the coconut oil in a soft-solid state for both to cream together nicely in your mixer. A bit of Golden Barrel light brown sugar, a couple of eggs, and a splash of vanilla is added to the coconut oil/butter mixture until nice and creamy. Then you remove the bowl from the mixer and mix by hand the rest of the ingredients; it really couldn’t be simpler.

Baked Oatmeal can be made with different mix-ins, but this time I was craving a taste of fall so I chopped up a couple of Gala apples and paired them with a healthy dose of cinnamon. Yum.

We typically pour half-and-half on top and enjoy it that way, but feel free to use any kind of milk you want. Of course I highly recommended eating it when the oatmeal is still a bit warm…can’t beat it. Give this recipe a try today: you’re sure to be both impressed and satisfied!

Instructions
  1. Preheat oven to 350 degrees F.
  2. In a bowl attached to stand mixer, whip butter and coconut oil together until light and fluffy. Mix in brown sugar and beat for 1-2 minutes. Add eggs and vanilla and mix until creamy, 1-2 minutes.
  3. By hand, stir in oatmeal, baking powder, salt, cinnamon, and milk until combined. Add apples, stir, and place in greased medium-sized baking dish. Bake for 30-40 minutes until golden brown and crispy around edges.
